A simple concept
There should be a really great place to have breakfast.
The creative and operational forces behind the cafe are comprised of a handful of people with a common bond; a love for cafes and their unique social and cultural impact on America.
It was our hope that by blending our talents with a "never settle for second best" philosophy we could bring a very special cafe to Chico.
Good Food starts simple
Our breakfast and lunch menus were created by chef Isabel Cruz, centered around tasty entrees, fresh quality ingredients and whimsical presentations.
Everything we serve is made in-house. The salsa is fresh. The bread is baked fresh. The beans are cooked fresh. If we had more room we'd probably try to raise our own beef.
Up your standards
There are tons of places that will serve you food from a can. You deserve better, and it's worth the wait.
Make the best coffee possible
Sin's founder, Chris Pendarvis, just might be the world's biggest coffee enthusiast. Our coffee preparation is based on his philosophy - 'make the best coffee possible, damn the cost'.
There aren't enough real coffee snobs.
Our House Coffee will always be rated 'Grand Cru', the top 2% of all the world's coffee. It will never be a Blend or Dark Roast (disgusting shortcuts taken with cheaper beans).
Our beans are Single Origin, meaning they come from the same plant, or group of plants. Many roasters cut their expensive beans with cheap ones and call it a 'blend' to save money. Single Origin beans are the only way to ensure consistent flavor and texture, no after taste and balanced acidity.
Preparation counts for a lot
We use a half-pound of ground beans to 90oz of water, nobody else is crazy enough to do this, it costs a fortune.
Our Specialty Coffees will always be made to order using small 24oz steaming pitchers, never behemoth 40-60oz pitchers. We will always grind espresso to order and give the proper 7 gram portion of ground espresso.
We do not reheat milk for a specialty coffee drinks. Our Whipping Cream is made fresh each shift. Our Decaf is brewed cup to cup, not by the pot. Our Mochas are made from a blend of two gourmet chocolates, not chocolate syrups. Our blended specialty drinks are made with fresh espresso, not cheap powdered mix.
